Adulting Mac & Cheese

Look, I agree, there’s not much better than a warm, creamy, cheesy pot full of your favourite noodles. I get it. I do. But sometimes, you gotta skip the powdered dairy and just try to adult for a minute. When I’m fiending this comfort food, my green spoons only know how to deliver this way. A must try, you gotta do it, I promise, you won’t regret this.

What You Need
Al dente cooked pasta of your choice (even spaghetti works here… not kidding)
– 1 tbsp olive oil
– shredded cheese of your choice (who am I to tell you how much cheese you need in your life?)
– Salt, pepper, garlic powder, parsley to taste

What You Do

Over medium high heat, warm up your olive oil. To stop the heat from cooking your noodles, run them under cold water to keep them just the way you like them. I started finishing my pasta over olive oil with spices and some heat. It just really brings the pasta another dimension of flavour that you can’t beat. A pasta dish is just that, a pasta dish. Pasta shouldn’t be mushy and bland or just taste like the topping sauce. It should be seasoned and given the chance to dance with other flavours to take on a taste of it’s own.

When your pan is hot, toss your noodles in and stir with a large wooden spoon or toss in the pan to cover each noodle. Act fast, you don’t have much time. Add as much spices as you want, it’s to taste, remember that! I tend to go a little more peppery most of the time, but this dish is good with lots of parsley. Toss your pasta with the spices and let sautee for about a minute.

From there, make sure your noodle are evenly spread in your pant. Take your shredded cheese and cover your pasta evenly. I like to salt and pepper mine up a little bit more. Remove from heat and cover with a tight lid until the cheese is melted.

The method is adult but the hack is all cheesy childlike goodness. Bowl or plate, take a spatula and lift sections of your pasta that’s being held together with warm, melty cheese and… get ready… layer it! This bowl has like 3 layers of pasta and cheese. It really doesn’t get much better than that. Just one of my comfort food adult hacks that’s sure to please!
